6 tbs unsalted butter (or vegan butter)
2/3 c coconut sugar 2 eggs room temp (or 3 oz just egg) 1 cup almond flour 1 cup rice flour ½ tsp baking powder ½ tsp baking soda ¼ tsp salt 1 tsp cinnamon ½ cup low fat vegan Greek yogurt @ room temp ½ cup sliced almonds |
How to prepare
Oven
1. Preheat-350, grease muffin tin
2. In large bowl beat butter and sugar, (with a handheld) on high till light (3m) Then beat in the eggs one at a time. In a separate bowl sieve all dry ingredients, then add butter egg mix to the dry mix, with the yogurt and ¼ cup water, mix just till combined 3. Gently fold in the apples using rubber spat 4. Pour in muffin tins and top with almonds, spice or sweet them however you like 5. Bake 25 min-30 min, rotate half way through |
