    16 vegan shrimp pieces

    1 tbsp whole grain mustard

    2 tbsp fresh lemon

    3 tbsp evoo

    3 tbsp lemon juice

    1 tbsp paprika

    1 tbsp parsley chopped

    ¾ tsp

    2 endive

    1 small radicchio

    4 cup arugula

    1 orange segmented

    1 avocado dice

    2 basil leaves torn

    Rejoice Citrus vinaigrette

    1. Sauté in hot oiled pan the shrimp just till hot and set aside
    2. In bowl toss all ingredients together with dressing and plate, or lay all out on plate and drizzle with rejoice vinaigrette
