½ c buckwheat flour

½ cup rice flour

½ tsp baking powder

½ tsp baking soda

¼ tsp salt

1 tsp ground cardamom

½ tsp cinnamon

2/3 cup vegan yogurt

2 eggs or 2 oz just egg

1 tsp vanilla

¼ cup dried cranberries


Berries for garnish

Agave, syrup




How to prepare

  1. Sift dry ingredients in a large mixing bowl, then add all wet ingredients, and whisk till smooth, and only few chunks, fold in dried cranberries
  2. Heat a skillet on medium high heat, add oil to pan evenly, add 1/4th cup batter to pan per pancake, cook 1 min until bubbles start to form then flip and cook one minute on the other side, repeat until batter is gone.
  3. Top with berries and agave
