Ingredients

½ head purple cauliflower

½ head while cauliflower

2 tbsp olive oil

1 tsp salt

5 oz kale

1 cup halved grapes

¾ cup toasted walnuts

½ cup vegan mozzarella

 

Dressing

 

2 tsp Dijon mustard

2 tbsp apple cider vinegar

3 tbsp vegetable oil

¼ tsp salt

2 tsp za’atar

1 tsp agave

  1. Preheat oven to 450… In a medium pot, fill with water and turn on high to simmer and add salt, cut cauliflower in florets, and once boiling add them to the water, cook 4 mins then drain, spread them on a sheet tray that’s been sprayed or use parchment paper. Forest 20 mins or until golden and roasted.
  2. Allow to cool on pan and make the dressing, adding all to whisk or blender.
  3. In a large mixing bowl, add cauliflower, and the rest of the ingredients, toss in dressing, top with vegan mozzarella.
