2 tsp Kosher Salt

¼ cup rice flour

2 oz eggs

¾ GF panko

3 tbsp olive oil

1 tsp black pepper

Lemon wedge


Arugula and oil, lemon for serving

  1. Between two pieces of plastic wrap, using the back of a small skillet, carefully pound till flatten the same size all around and is thinner.
  2. Season with salt and pepper on both sides
  3. Place flour, egg, and breadcrumb in separate bowls, one at a time dip in the flour then the egg then the breadcrumb, pressing to be sure its covered
  4. Hit oil in skillet and once hot add the chicken and brown on both sides about 4 mins
  5. Remove from heat and rest on wire rack, when ready to serve serve with light arugula salad tossed in lemon juice and olive oil
