How to prepare
Microwave
- Between two pieces of plastic wrap, using the back of a small skillet, carefully pound till flatten the same size all around and is thinner.
- Season with salt and pepper on both sides
- Place flour, egg, and breadcrumb in separate bowls, one at a time dip in the flour then the egg then the breadcrumb, pressing to be sure its covered
- Hit oil in skillet and once hot add the chicken and brown on both sides about 4 mins
- Remove from heat and rest on wire rack, when ready to serve serve with light arugula salad tossed in lemon juice and olive oil
