¼ cup olive oil

1 sweet potato, cut in pont-neuf

¾ tsp salt

½ tsp turmeric

2 tbsp brown sugar

½ tsp cinnamon

2 cup kale

1 cup brown rice cooked

½ avocado thin slice

¼ cup walnuts (optional)

Parsley, tarragon, basil, or your favorite herb

4 oz just egg scramble

How to prepare

  1. Toss sweet potatoes in salt, brown sugar, and oil and bake at 350 for 30 mins or until soft and roasted, set aside
  2. In pan saute kale, set aside
  3. Same pan add cooked rice and all seasonings
  4. Plate like binto box, rice down, top with kale, then sweet potato, next to that scramble egg, thin sliced avocado and top with walnuts and herbs!
