¼ cup olive oil
1 sweet potato, cut in pont-neuf ¾ tsp salt ½ tsp turmeric 2 tbsp brown sugar ½ tsp cinnamon 2 cup kale 1 cup brown rice cooked ½ avocado thin slice ¼ cup walnuts (optional) Parsley, tarragon, basil, or your favorite herb 4 oz just egg scramble |
How to prepare
Oven
- Toss sweet potatoes in salt, brown sugar, and oil and bake at 350 for 30 mins or until soft and roasted, set aside
- In pan saute kale, set aside
- Same pan add cooked rice and all seasonings
- Plate like binto box, rice down, top with kale, then sweet potato, next to that scramble egg, thin sliced avocado and top with walnuts and herbs!
