Vegan Bolognese on summer squash noodles
|1 # vegan chicken
1 ½ tsp salt
1 med carrot
¼ tsp dried oregano
½ tsp red pepper flake
1 cup dry red wine (not provided)
28 oz tomato puree
1 bunch basil with stems
2 tbsp roasted garlic
1 zucchini noodle
1 yellow squash noodle
- In oiled sauté pan add diced onions, and roasted garlic, sauté 5 mins then add red wine, cook till most liquid is out, add chicken, then add vegetable stock
- Add noodles sauté 5 more mins then add seasonings, herbs and tomato puree
- Cook just till sauce is hot and plate!
